Brewing the Kombucha

Step 1: Prepare the Tea
In a large pot, bring 4 cups of water to a boil. Once boiling, remove from heat and stir in 1 cup of granulated sugar until fully dissolved. Add 4 tablespoons of loose black tea and steep for about 10-15 minutes.

Step 2: Cool the Tea
After steeping, strain the tea to remove the tea leaves and allow the sweetened tea to cool to room temperature.

Cover the jar with a cloth or coffee filter secured with a rubber band. Allow the kombucha to ferment in a warm, dark place for 7-14 days, depending on your taste preference.

Step 5: Prepare Flavorings
After fermentation, remove the SCOBY and set it aside. If you want a flavored kombucha, prepare your seasonal flavorings. For example, chop 1 cup of fresh fruit and mix with 1 tablespoon of fresh herbs.

Step 7: Second Fermentation
Seal the bottles and let them sit at room temperature for another 3-7 days to carbonate. Monitor the pressure to avoid over-carbonation.
