Toast Points

    Prepare the Toast Points

    Preheat the oven to 375°F (190°C). Brush each slice of sourdough bread with olive oil on both sides.

    Toast the Bread

    Arrange the slices on a baking sheet and toast in the oven for about 10-12 minutes, or until golden brown and crispy. Remove from the oven and let cool slightly.

Pickled Herring

    Prepare the Herring

    Open the jar of pickled herring and drain the liquid. Cut the herring fillets into bite-sized pieces and set aside.

Sunflower Pesto

    Make the Pesto

    In a food processor, combine sunflower seeds, basil leaves, garlic cloves, parmesan cheese, olive oil, salt, and lemon juice. Blend until smooth and creamy. Adjust seasoning to taste.

Fried Capers

    Fry the Capers

    In a small skillet, heat 1 tablespoon of olive oil over medium heat. Add the capers and fry for about 2-3 minutes, or until they start to pop and become crispy. Remove from heat and drain on paper towels.

Assembly

    Assemble the Tosts

    On each toasted sourdough point, spread a generous layer of sunflower pesto, followed by the pickled herring pieces. Top with a handful of arugula and a sprinkle of fried capers.
