    Prepare the Ingredients

    Rinse the green split peas under cold water and set aside. Peel and dice the potatoes and carrots. Chop the onion and mince the garlic.

Cooking

    Cook the Bacon

    In a large pot over medium heat, cook the bacon slices until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

    Sauté the Aromatics

    Add the chopped onion to the pot with the bacon fat and sauté for 3-4 minutes until translucent. Add minced garlic and cook for an additional minute.

    Add Vegetables and Peas

    Stir in the diced potatoes, carrots, and rinsed split peas. Mix well to combine with the aromatics.

    Incorporate Meats

    Add the diced ham and sliced smoked sausage to the pot, along with the cooked bacon, crumbled into pieces.

    Season the Stew

    Add dried thyme, bay leaves, salt, and black pepper to the pot. Mix everything together.

    Add Liquid and Simmer

    Pour in 6 cups of water or broth and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot. Let it simmer for 1.5 to 2 hours, stirring occasionally until the split peas are tender.

    Taste the stew and adjust seasoning as needed. Remove bay leaves before serving.
