Latkes Preparation

    Grate Potatoes and Onion

    Peel and grate the russet potatoes and onion using a box grater or food processor. Place the grated mixture in a clean kitchen towel and squeeze out excess moisture.

    Combine Ingredients

    In a large bowl, combine the grated potatoes, onion, egg, flour, salt, and pepper. Mix until well combined.

    Heat Oil and Form Patties

    In a large skillet, heat the vegetable oil over medium-high heat until hot. Form the potato mixture into small patties.

    Fry Latkes

    Fry the latkes for about 3-4 minutes on each side or until golden brown and crispy. Once cooked, drain on paper towels.

Lemon Garlic Bechamel Sauce Preparation

    Make Roux

    In a saucepan, melt the butter over medium heat. Once melted, add the flour and whisk together to create a roux.

    Add Milk

    Gradually add the milk, whisking continuously until the sauce thickens. This should take about 5 minutes.

    Add Lemon and Garlic

    Stir in the lemon juice, minced garlic, salt, and black pepper. Cook for another 2-3 minutes until the garlic is fragrant.

Assembly and Topping

    Cook Eggs

    Cook the eggs to your preference (poached or fried) in the same skillet used for latkes.

    Plate Latkes

    On a serving plate, place two latkes, then top each latke with a generous spoonful of lemon garlic bechamel sauce.

    Layer smoked salmon and fresh arugula on top of the bechamel sauce.

    Finish with fried capers and place the cooked eggs on the side of the latkes.
