Method

Roasting Beets

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Beets

    Wash and scrub the beets. Trim the tops and tails, then wrap each beet in aluminum foil. Drizzle with 1 tablespoon of olive oil and sprinkle with rosemary.

    Roast the Beets

    Place the wrapped beets on a baking sheet and roast in the preheated oven for about 45-60 minutes, or until a fork easily pierces through.

    Cool the Beets

    Remove the beets from the oven, unwrap them, and let them cool for about 10 minutes. Once cool enough to handle, peel the skins off the beets.

Making the Hummus

    Blend Ingredients

    In a food processor, combine the roasted beets, chickpeas, tahini, garlic, lemon juice, and salt.

    Process Until Smooth

    Blend the mixture until smooth, adding water if needed to achieve your desired consistency.

    Taste the hummus and adjust seasoning, adding more salt or lemon juice as needed.

Serving Suggestions

    Transfer the beet hummus to a serving bowl.
