Pasta Cooking

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Once cooked, reserve 1 cup of the pasta water, then drain the pasta and set aside.

Vegetable Preparation

    Prepare the Vegetables

    While the pasta is cooking, wash and slice all the vegetables. Make sure to keep the vegetables in bite-sized pieces for even cooking.

Sauce Preparation

    Make the Sauce

    In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant. Then, add the vegetable broth and bring to a simmer.

    Add Vegetables

    Add the prepared vegetables (zucchini, bell pepper, cherry tomatoes, carrots, broccoli, and spinach) to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

Combine and Serve

    Combine Pasta and Sauce

    Add the cooked pasta to the skillet with the sautéed vegetables. Pour in the reserved pasta water and lemon juice. Season with salt and black pepper. Toss everything together to combine well.

    If desired, sprinkle grated Parmesan cheese on top before serving. Enjoy your Pasta Primavera!
