Cooking Rice

    In a blender or food processor, combine shallots, garlic, ginger, kaffir lime leaves, turmeric powder, red chili, coriander powder, cumin powder, and salt. Blend until you achieve a smooth paste.

Cooking the Chicken

    In a bowl, mix the chicken thighs with the spice paste, ensuring all pieces are well coated. Let it marinate for at least 30 minutes.
