    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick, to make fries.

    Soak the Potatoes

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch. This helps in achieving a crispier texture.

Cooking

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Dry the Potatoes

    After soaking, drain the fries and pat them dry with a clean kitchen towel to remove excess moisture.

    Fry the Potatoes

    Carefully add the dried fries to the hot oil in small batches. Fry them for about 4-5 minutes or until they turn golden brown and crispy. Do not overcrowd the pot.

    Drain Excess Oil

    Use a slotted spoon to remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil.
