Method

Preparing the Salad

  1. 1

    Wash and Prepare Greens

Thoroughly wash the mixed greens under cold running water. Shake off excess water or use a salad spinner to dry them. Tear or chop the greens into bite-sized pieces and place them in a large salad bowl.

  2. 2

    Prep Vegetables

Halve the cherry tomatoes and add them to the bowl. Peel the cucumber, slice it in half lengthwise, and then slice it into half-moons. Add the cucumber pieces to the salad bowl.

  3. 3

    Add Add-Ons

Cut the avocado in half, remove the pit, and scoop out the flesh. Slice the avocado into pieces and add them to the salad. Crumble the feta cheese over the top. Thinly slice the red onion and add to the bowl. Toss in the olives.

Making the Dressing

  1. 4

    Combine Dressing Ingredients

In a small bowl or a jar, combine the olive oil, balsamic vinegar, honey, salt, and black pepper.

  2. 5

    Mix Well

Whisk or shake the mixture well until all ingredients are emulsified and combined.

Assembling the Salad

  1. 6

    Dress the Salad

Drizzle the dressing over the salad mixture in the bowl. Start with half of the dressing and add more to taste.

  2. 7

    Toss and Serve

Gently toss the salad with salad tongs or two large spoons until everything is well mixed. Serve immediately.
