Method

Make Blueberry Compote

  1. 1

    Combine Ingredients

In a medium saucepan, combine fresh blueberries, granulated sugar, water, and lemon juice. Stir gently to mix.

  2. 2

    Cook the Compote

Place the saucepan over medium heat and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 15 minutes, or until the blueberries break down and the mixture thickens slightly.

  3. 3

    Cool the Compote

Remove the saucepan from heat and let the blueberry compote cool to room temperature. Once cooled, transfer to a bowl and refrigerate until ready to serve.

Prepare Fruits

  1. 4

    Slice Strawberries

Wash and hull the strawberries. Slice them into halves or quarters, depending on their size.

  2. 5

    Slice Banana

Peel the banana and slice it into rounds.

  3. 6

    Prepare Pineapple

If using a whole pineapple, peel and core it, then cut it into bite-sized pieces. If using canned pineapple, drain well before using.

Assemble Dessert

  1. 7

    Scoop Ice Cream

In serving bowls or dishes, scoop about 1 cup of vanilla bean ice cream into each bowl.

  2. 8

    Top with Compote and Fruits

Spoon the blueberry compote generously over the ice cream. Then, add the sliced strawberries, banana rounds, and pineapple pieces on top.

  3. 9

    Serve Immediately

Serve the dessert immediately to enjoy the combination of flavors and textures while the ice cream is still cold.
