Method

Fries

  1. 1

    Prepare the Potatoes

Wash and peel the gold potatoes. Cut them into thick fries, about 1/2 inch wide.

  2. 2

    Soak the Fries

Soak the cut fries in cold water for at least 30 minutes to remove excess starch. This helps in achieving crispier fries.

  3. 3

    Heat the Oil

In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C). Ensure you have enough oil to submerge the fries.

  4. 4

    Fry the Potatoes

Drain the soaked fries and pat them dry with a towel. Carefully add them to the hot oil in batches to avoid overcrowding. Fry for about 5-6 minutes until they are golden brown and crispy.

  5. 5

    Season the Fries

Remove fries from the oil and place them on a paper towel-lined plate. Immediately sprinkle with salt while they are still hot.

Frite Sauce

  1. 6

    Mix the Sauce

In a bowl, combine mayonnaise, ketchup, apple cider vinegar, mustard, garlic powder, paprika, and pepper. Whisk until smooth and well blended.

Pickled Onions

  1. 7

    Prepare the Onions

Slice the red onion thinly and place it in a jar.

  2. 8

    Make the Pickling Solution

In a saucepan, combine white vinegar, sugar, and salt. Heat over medium heat until the sugar and salt dissolve.

  3. 9

    Pickle the Onions

Pour the hot pickling solution over the sliced onions in the jar. Let it cool to room temperature, then refrigerate for at least 1 hour before serving.
