For the Beer Battered Cod

Prepare the Battering Mixture
In a mixing bowl, combine all-purpose flour, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and free of lumps.

Heat the Oil
In a deep skillet or fryer, heat vegetable oil to 350°F (175°C).

Batter the Cod
Dip each cod fillet into the batter, ensuring it is fully coated.

Fry the Cod
Carefully place the battered cod into the hot oil and fry for about 4-6 minutes, or until golden brown and cooked through. Remove and drain on paper towels.
For the Dutch Tarragon Tartar Sauce

Mix the Sauce
In a small bowl, combine mayonnaise, chopped tarragon, chopped capers, lemon juice, salt, and black pepper. Stir well until all ingredients are evenly mixed.

Prepare the Sourdough Rolls
Slice the sourdough hoagie rolls open lengthwise.

Assemble the Sandwich
Spread a generous amount of the Dutch tarragon tartar sauce on the inside of each roll. Layer arugula, followed by the fried cod fillets, and top with pickled onions.
