Marinade

To Serve

Method

Marinade and Skewering

  1. 1

    Prepare the Marinade

In a large mixing bowl, combine coconut milk, soy sauce, peanut butter, brown sugar, lime juice, ground coriander, ground cumin, garlic powder, ginger powder, salt, and black pepper. Mix well until smooth.

  2. 2

    Marinate the Chicken

Cut the boneless, skinless chicken thighs into bite-sized pieces. Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour, or preferably overnight for better flavor.

  3. 3

    Prepare the Skewers

If using wooden skewers, soak them in water for 30 minutes to prevent burning. After marinating, thread the chicken pieces onto the skewers, packing them closely but not too tight.

Cooking

  1. 4

    Grill the Skewers

Preheat your grill or grill pan over medium-high heat. Once hot, place the chicken skewers on the grill. Cook for 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.

  2. 5

    Serve

Remove the skewers from the grill and let them rest for a couple of minutes. Serve with peanut sauce, fresh cucumber slices, and garnish with fresh cilantro.
