Hot Honey Chicken

    Marinate the Chicken

    In a large bowl, combine chicken thighs and buttermilk. Cover and refrigerate for at least 1 hour, preferably overnight.

    Prepare the Coating

    In a shallow dish, mix together flour, paprika, garlic powder, onion powder, salt, and black pepper.

    Coat the Chicken

    Remove chicken from buttermilk, allowing excess to drip off. Dredge in the flour mixture, pressing to adhere. Shake off excess.

    Fry the Chicken

    In a large skillet, heat vegetable oil over medium-high heat. Fry chicken in batches for about 7-10 minutes per side until golden brown and cooked through. Internal temperature should reach 165°F (75°C).

    Make Hot Honey

    In a small saucepan, combine honey and red pepper flakes. Heat over low until warm. Drizzle over fried chicken before serving.

    Prepare the Batter

    In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, whisk milk, eggs, melted butter, and vanilla extract until well combined.

    Combine Ingredients

    Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the pearl sugar.

    Cook the Waffles

    Preheat your waffle iron. Pour the batter onto the hot waffle iron and cook according to the manufacturer's instructions, usually about 4-5 minutes, or until golden brown.

Over Medium Eggs

    Cook the Eggs

    In a non-stick skillet, melt butter over medium heat. Crack the eggs into the skillet and cook until whites are set but yolks are still runny, about 3-4 minutes. Flip and cook for an additional 1-2 minutes for over medium.

Garnish & Serve

    Assemble the Dish

    On a plate, stack a waffle, top with hot honey chicken, and an over medium egg. Garnish with chopped green onions and serve with a side of mixed fresh fruit.
