Prepare the crust
In a mixing bowl, combine graham cracker crumbs, granulated sugar, melted unsalted butter, and salt. Mix until well combined.

Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Ensure the crust is even and compact. Pre-bake in a preheated oven at 350°F (175°C) for 8-10 minutes. Remove and let cool.

Prepare the filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add granulated sugar and mix until well combined.

Add remaining ingredients
Add sour cream, vanilla extract, and eggs. Mix on low speed until just combined. Be careful not to overmix.

Bake the cheesecake
Pour the filling over the cooled crust in the springform pan. Bake in the oven at 325°F (160°C) for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

Chill the cheesecake
Remove from the oven and refrigerate for at least 4 hours, preferably overnight.

Prepare the berry sauce
In a small saucepan over medium heat, combine mixed berries, granulated sugar, and lemon juice. Cook while stirring until the berries break down and the sauce thickens, about 10-15 minutes.

Cool the sauce
Remove from heat and let cool before serving. This sauce can be made ahead and stored in the refrigerator.
