Method

Calamari Preparation

    Clean the Calamari

    Rinse the fresh calamari under cold water. Remove the skin and innards, and slice the body into rings.

    Prepare the Breading

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well.

    Create the Wet Batter

    In another bowl, whisk together the egg and milk until well combined.

    Bread the Calamari

    Dip each calamari ring into the wet batter, allowing excess to drip off, then coat it in the flour mixture. Set aside on a baking sheet.

Frying Calamari

    Heat the Oil

    In a large deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the breaded calamari rings in batches to the hot oil. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Marinara Sauce Preparation

    Sauté the Garlic

    In a saucepan over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasonings

    Add the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Stir to combine.

    Simmer the Sauce

    Reduce heat to low and let the sauce simmer for about 15-20 minutes. Stir occasionally.

    Finish the Sauce

    Stir in the chopped fresh parsley just before serving.
