Method

Preparing the Peach Puree

  1. 1

    Step 1: Prepare the Peaches

Wash the peaches thoroughly. Cut them in half, remove the pits, and chop them into smaller pieces.

  2. 2

    Step 2: Cook the Peaches

In a saucepan, combine the chopped peaches, water, and granulated sugar. Cook over medium heat until the peaches are soft and the sugar has dissolved, about 10-15 minutes.

  3. 3

    Step 3: Blend the Mixture

Remove the saucepan from the heat and let it cool slightly. Transfer the mixture to a blender and blend until smooth. Allow the peach puree to cool completely.

Mixing the Bellini

  1. 4

    Step 4: Combine Ingredients

In a large glass or pitcher, add 1 part of the peach puree to 3 parts of chilled Prosecco. For example, use 1/4 cup of peach puree to 3/4 cup of Prosecco, adjusting to your taste.

  2. 5

    Step 5: Stir Gently

Stir gently to combine the peach puree and Prosecco. Be careful not to stir too vigorously to maintain the bubbles in the Prosecco.

  3. 6

    Step 6: Serve

Pour the Bellini into chilled glasses and garnish with fresh mint leaves. Serve immediately and enjoy!
