Mix the Meatball Ingredients
In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, egg, chopped onion, minced garlic, chopped parsley, salt, black pepper, and nutmeg. Mix until well combined.

Form and Cook the Meatballs
Preheat the oven to 400°F (200°C). Form the mixture into meatballs about 1.5 inches in diameter and place them on a baking sheet lined with parchment paper. Bake for 20-25 minutes until browned and cooked through.

Make the Gravy
In a medium saucepan over medium heat, melt the butter. Stir in the flour until a paste forms. Gradually add the beef broth, whisking continuously to prevent lumps. Add soy sauce, Worcestershire sauce, salt, and black pepper. Bring to a simmer and cook until thickened, about 5-7 minutes.

Combine Meatballs with Gravy
Once the meatballs are cooked, add them to the gravy and let them simmer together for 5 minutes to absorb the flavors.

Assemble the Sub
Slice the sourdough hoagie rolls lengthwise without cutting all the way through. Fill each roll with meatballs and gravy, then top with shredded cheddar cheese.

Melt the Cheese
Place the assembled subs under the broiler for 2-3 minutes until the cheese is melted and bubbly.

Serve with Fries
