Caramel Preparation

Make the Caramel
In a medium saucepan, combine the granulated sugar and water. Heat over medium heat, stirring constantly until the sugar has dissolved. Once dissolved, stop stirring and allow the mixture to boil until it turns a golden amber color, about 8-10 minutes.

Coat the Flan Mold
Quickly pour the caramel into a round flan mold or individual ramekins, tilting to coat the bottom evenly. Set aside to allow the caramel to harden.

Mix the Flan Ingredients
In a large mixing bowl, combine the sweetened condensed milk, evaporated milk, eggs, and vanilla extract. Whisk until smooth and well blended.

Pour Mixture into Mold
Slowly pour the flan mixture over the set caramel in the mold, making sure not to disturb the caramel layer.

Bake the Flan
Preheat your oven to 350°F (175°C). Place the flan mold in a larger baking dish filled with hot water (water bath). Bake for 50-60 minutes or until a knife inserted in the center comes out clean.

Cool and Unmold
Remove the flan from the oven and let it cool in the water bath for about 30 minutes. Then, refrigerate for at least 4 hours or overnight. To unmold, run a knife around the edges and invert onto a serving plate.
