Prepare Filling

    Cook the Meat

    In a large skillet, cook the ground beef and pork over medium heat until browned. Drain excess fat.

    Add Vegetables

    Stir in minced garlic, chopped onion, cumin, chili powder, salt, and black pepper. Cook until the onion is translucent.

    Mix with Sauce

    Add the red sauce to the meat mixture and stir to combine. Remove from heat and set aside.

Prepare Dough

    Mix Dry Ingredients

    In a large bowl, combine masa harina, baking powder, and salt.

    Incorporate Lard

    Add lard or shortening to the dry ingredients and mix until crumbly.

    Add Broth

    Gradually add chicken broth while mixing until a soft dough forms.

Prepare Corn Husks

    Soak Corn Husks

    Soak the dried corn husks in warm water for about 30 minutes until pliable.

Assemble Tamales

    Spread Dough

    Take a soaked corn husk, spread about 1/4 cup of tamale dough onto the center of the husk, leaving space at the edges.

    Add Filling

    Place 2 tablespoons of meat filling on top of the dough.

    Roll and Fold

    Fold the sides of the husk over the filling, then fold the bottom up to enclose the tamale.

    Repeat

    Repeat the process with the remaining husks, dough, and filling.

Cook Tamales

    Prepare Steamer

    Set up a steamer pot with water in the bottom and bring to a simmer.

    Steam Tamales

    Place the tamales upright in the steamer basket and cover. Steam for about 1 to 1.5 hours, or until the dough is firm.

    Combine Green Sauce Ingredients

    In a mixing bowl, combine fresh corn, diced green chiles, softened cream cheese, and green sauce. Mix until smooth and creamy.
