Steak Marinade

Method

Steak Marinade

  1. 1

    Prepare the Marinade

In a bowl, combine olive oil, lime juice, minced garlic, cumin, paprika, salt, and black pepper. Mix well.

  2. 2

    Marinate the Steak

Cut the flank steak into bite-sized pieces and add to the marinade. Mix until the steak is well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Cooking Steak and Vegetables

  1. 3

    Preheat the Grill

Preheat your grill or a grill pan over medium-high heat.

  2. 4

    Cook the Steak

Remove the steak from the marinade and thread the pieces onto skewers. Grill for about 4-5 minutes on each side, or until cooked to your desired doneness.

  3. 5

    Grill the Vegetables

While the steak is cooking, toss the diced tomatoes, sliced onion, bell peppers, and jalapeños in a bit of olive oil, salt, and pepper. Grill the vegetables for about 5-7 minutes, or until they are tender and slightly charred.

Serving

  1. 6

    Prepare the Plate

On a serving plate, place a generous scoop of cooked rice and a portion of your choice of beans.

  2. 7

    Add Steak and Vegetables

Top the rice and beans with the grilled steak and vegetables. Serve with warm tortillas on the side.
