Prepare the Vegetables
Wash and chop the fresh spinach, onion, red bell pepper, tomato, and jalapeño pepper into small, bite-sized pieces.

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onions and jalapeño pepper and sauté for about 3-4 minutes until the onions become translucent.

Add Spinach and Peppers
Add the chopped spinach and red bell pepper to the skillet. Cook for an additional 3-5 minutes, stirring occasionally, until the spinach wilts.

Melt the Cheese
Reduce the heat to low, add the cream cheese to the vegetable mixture, and stir until it becomes creamy and well combined. Gradually add the jalapeño-Jack cheese, stirring continuously until melted and smooth.

Serve
Once the cheese is melted and the mixture is well combined, remove from heat and serve warm as a dip or a side dish.
