Enchilada Filling Preparation

    Brown the Beef

    In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.

    Sauté Onion and Garlic

    Add chopped onion and minced garlic to the skillet. Cook for an additional 3-4 minutes until the onion is translucent.

    Mix and Simmer Filling

    Stir in the canned diced tomatoes, chili powder, ground cumin, salt, and black pepper. Mix well and let simmer for about 5 minutes.

    Add Cheese

    Remove from heat and stir in 1 cup of shredded cheddar cheese until melted.

Enchilada Sauce Preparation

    Make Roux

    In a medium saucepan, heat olive oil over medium heat. Whisk in the flour and cook for 1 minute until lightly browned.

    Add chili powder and stir for another minute. Then, gradually whisk in the tomato sauce and vegetable broth.

    Stir in ground cumin, salt, and black pepper. Simmer for about 10 minutes until thickened, stirring occasionally.

Assembling the Enchiladas

    Preheat Oven

    Preheat the oven to 375°F (190°C).

    Prepare Baking Dish

    Spread a thin layer of enchilada sauce in the bottom of a 9x13 inch baking dish.

    Fill and Roll Tortillas

    Warm the corn tortillas in a microwave or on a skillet until pliable. Fill each tortilla with a portion of the beef filling, roll them up, and place seam-side down in the baking dish.

    Top with Sauce and Cheese

    Once all tortillas are filled and placed in the dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheddar cheese.

    Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.

    Remove from oven and let cool slightly. Garnish with chopped cilantro and serve with sour cream.
