    Soak the Beans

    Rinse the pinto beans under cold water. Place them in a large bowl, cover with water, and let soak for at least 8 hours or overnight.

    Cook the Beans

    After soaking, drain and rinse the beans. In a large pot, add the soaked beans, 4 cups of water, garlic cloves (smashed), and the onion (quartered). Bring to a boil, then reduce heat to low, cover, and simmer for about 1.5 to 2 hours, or until beans are tender.

    Mash the Beans

    Once the beans are cooked, remove the onion and garlic. Drain excess liquid, reserving some for later use. In the same pot, add olive oil and mash the beans using a potato masher or fork, adding reserved liquid to achieve desired consistency.

    Season the Beans

    Add salt to the mashed beans, mix well, and adjust seasoning to taste.

Optional Additions

    Add Protein

    If desired, stir in shredded beef, shredded chicken, spicy machaca beef, or chorizo into the mashed beans. Mix well and heat through.
