Method
Marinating the Protein

Prepare Marinade
In a bowl, combine olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper. Mix well.

Marinate Protein
Place the pork or chicken in a resealable bag or shallow dish. Pour the marinade over the meat, ensuring it is fully coated. Seal or cover, and marinate in the refrigerator for at least 1 hour, or preferably overnight.
Grilling the Vegetables

Prepare Vegetables
Slice the red bell pepper, green bell pepper, onion, and jalapeño into thin strips.

Grill Vegetables
Heat a skillet over medium heat. Add a tablespoon of olive oil. When hot, add the sliced vegetables and sauté until they are tender and slightly charred, about 5-7 minutes. Remove from heat and set aside.
Cooking the Protein

Grill the Marinated Protein
Remove the marinated pork or chicken from the refrigerator. Preheat a grill or grill pan over medium-high heat. Grill the protein for 6-8 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing.

Prepare Cream Cheese Mixture
In a bowl, mix the cream cheese, diced jalapeño, garlic powder, and salt to taste until well combined.
Assembling Quesadillas

Assemble Quesadillas
Lay a tortilla flat on a clean surface. Spread a layer of jalapeño-cream cheese mixture on half of the tortilla. Top with a portion of grilled protein, sautéed vegetables, and shredded cheese. Fold the tortilla over to create a half-moon shape.

Cook Quesadillas
In the same skillet used for the vegetables, add a tablespoon of olive oil over medium heat. Place the folded quesadilla in the skillet and cook for 3-4 minutes on each side until golden brown and the cheese is melted. Repeat with remaining tortillas.

Cut the quesadillas into wedges and serve hot with salsa, sour cream, or guacamole on the side.
