For the Taco Baskets

    Prepare Taco Baskets

    Heat the cooking oil in a deep skillet over medium-high heat. Once hot, carefully fry each corn tortilla for about 30 seconds on each side, or until they become golden and slightly crispy.

    Shape the Baskets

    While the tortillas are hot, carefully drape them over the back of a muffin tin to shape them into baskets. Allow them to cool and harden for about 10 minutes.

For the Shredded Beef Filling

    Cook the Beef

    In a large pot, add the beef chuck roast, chopped onion, minced garlic, beef broth, taco seasoning, salt, and pepper. Bring to a boil, then reduce heat to low and cover. Let it simmer for about 3 hours, or until the beef is tender and easily shredded.

    Shred the Beef

    Once the beef is cooked, remove it from the pot and shred it using two forks. Return the shredded beef to the pot and mix it with the remaining juices.

For the Shredded Chicken Filling

    Cook the Chicken

    In a separate pot, add the chicken breasts, chopped onion, minced garlic, chicken broth, taco seasoning, salt, and pepper. Bring to a boil, then reduce heat to low and cover. Let it simmer for about 20-30 minutes, or until the chicken is cooked through.

    Shred the Chicken

    Once the chicken is cooked, remove it from the pot and shred it using two forks. Return the shredded chicken to the pot and mix it with the remaining juices.

To Assemble

    Fill the Taco Baskets

    Take the cooled taco baskets and fill each with a combination of shredded beef and shredded chicken. Top with shredded lettuce, diced tomatoes, sour cream, salsa, and avocado slices.

    Serve

    Arrange the filled taco baskets on a serving platter and serve immediately while they are warm.
