Homemade Mexicali Preparation

Combine Ingredients
In a large mixing bowl, combine the canned black beans, corn kernels, diced tomatoes with green chilies, chopped red onion, ground cumin, chili powder, salt, and black pepper. Mix well until all ingredients are evenly distributed.

Add Cilantro
Fold in the chopped fresh cilantro into the Mexicali mixture and set aside.
Spinach con Queso Preparation

Sauté Spinach
In a medium saucepan over medium heat, add the fresh spinach leaves and sauté until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

Mix Cheese Ingredients
In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, sour cream, garlic powder, and diced jalapeños. Mix until creamy and well combined.

Final Assembly

Layer the Dip
In a serving dish, layer the Homemade Mexicali mixture at the bottom, followed by the Spinach con Queso mixture on top.

Chill and Serve
Cover the dish with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together. Serve with tortilla chips or fresh vegetables.
