Cheese Preparation

    Combine Cheeses

    In a medium mixing bowl, combine the Monterey Jack cheese, Cheddar cheese, and cream cheese. Mix well until all cheeses are evenly incorporated.

    Melt Cheese

    Transfer the cheese mixture into a small oven-safe dish or skillet. Preheat your oven to 350°F (175°C). Place the dish in the oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.

Tortillas and Serving

    Prepare Tortillas

    While the cheese is melting, heat a non-stick skillet over medium heat. Brush the flour tortillas lightly with olive oil on both sides. Once the skillet is hot, add the tortillas one at a time and cook for about 30 seconds on each side until they are warm and slightly golden.

    Prepare Jalapeños

    If using fresh jalapeños, slice them into thin rings. If you prefer them pickled, you can use store-bought pickled jalapeños.

    Serve Fundido

    Once the cheese is melted, remove it from the oven. Serve the melted cheese immediately with warm tortillas and jalapeño slices on the side. Optionally, garnish with fresh cilantro for extra flavor.
