Preparing the Filling

Add Cheese
Once the meat mixture has cooled, stir in the shredded cheddar cheese until well combined.
Making the Chimichangas

Fill the Tortillas
Take a flour tortilla and place a generous amount of the meat and cheese filling in the center. Fold in the sides and roll up tightly to enclose the filling.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chimichangas
Carefully place the rolled chimichangas into the hot oil, frying in batches if necessary. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Plate the Dish
On a large plate, place a chimichanga, top with a generous amount of green sauce, and add dollops of guacamole and sour cream. Serve alongside cooked rice and choice of beans.
