Chimichanga Filling Preparation

    Cook the Beef

    In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Add Vegetables and Spices

    Add the diced onion and minced garlic to the skillet with the beef. Cook for another 2-3 minutes until the onion is translucent. Stir in the chili powder, cumin, salt, and black pepper. Mix well to combine.

    Mix in Refried Beans

    Add the refried beans to the skillet and mix until well combined. Cook for an additional 2 minutes to heat through.

    Add Cheese

    Remove the skillet from heat and stir in the shredded cheese until melted and evenly distributed.

Assembly and Cooking

    Prepare Tortillas

    Warm the tortillas in a microwave or on a skillet for a few seconds until soft and pliable.

    Fill the Tortillas

    Spoon a generous amount of the chimichanga filling onto the center of each tortilla. Fold the sides over the filling and then roll it up tightly from the bottom.

    Heat Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

    Fry the Chimichangas

    Carefully place the filled chimichangas into the hot oil, seam side down. Fry for about 3-4 minutes on each side until golden brown and crispy. Remove from oil and drain on paper towels.

    Serve the chimichangas hot with sour cream, guacamole, salsa, and chopped cilantro on the side.
