Preparation of Enchilada Sauce

Make the Enchilada Sauce (if not using pre-made)
In a blender, combine 2 cups of diced tomatoes, 1/2 onion, 2 cloves of garlic, 1 tsp of cumin, 1 tsp of chili powder, and salt to taste. Blend until smooth. Pour the mixture into a saucepan and simmer for 15 minutes until thickened.

Simmer the Chips
In a large skillet, pour the homemade enchilada sauce and heat over medium heat. Once simmering, add the corn tortilla chips and gently stir until they are well coated with the sauce. Let them simmer for about 5 minutes to absorb the flavors.

Assemble the Chilaquiles
Once the tortilla chips are softened and coated, remove the skillet from heat. Top the chips with the fried eggs, then sprinkle shredded cheese over everything. Cover the skillet for a couple of minutes until the cheese melts.

Garnish and Serve
Sprinkle chopped cilantro, add a dollop of sour cream, and garnish with sliced jalapeños. Serve immediately while hot.
