    Prepare the Egg Mixture

    In a mixing bowl, crack the eggs and add milk, salt, and black pepper. Whisk until well combined.

    Cook the Eggs

    In a non-stick skillet, heat olive oil over medium heat. Pour in the egg mixture and stir gently with a spatula. Scramble the eggs until they are just set but still soft, about 3-4 minutes. Remove from heat and fold in the shredded cheddar cheese until melted.

    Warm the Tortillas

    In a separate skillet or microwave, warm the flour tortillas until pliable, about 30 seconds in the microwave.

    Assemble the Burritos

    Place half of the scrambled eggs in the center of each tortilla. Top with salsa and chopped cilantro. Roll up the tortillas tightly to form burritos.

    Prepare the Enchilada Style

    In a baking dish, spread half of the enchilada sauce on the bottom. Place the burritos seam-side down in the dish. Pour the remaining enchilada sauce over the burritos.

    Preheat the oven to 350°F (175°C). Cover the baking dish with foil and bake for 15 minutes. Remove foil and bake an additional 5 minutes until heated through.
