Prepare the Filling

    Combine Ingredients

    In a mixing bowl, combine the refried beans, cooked rice, shredded cheese, guacamole, and sour cream. Mix until well combined and set aside.

Assemble the Burritos

    Fill the Tortillas

    Warm the flour tortillas slightly in a skillet or microwave for easier folding. Place a generous amount of the filling mixture (about 1 cup) in the center of each tortilla.

    Wrap the Burrito

    Fold the sides of the tortilla over the filling, then roll the tortilla from the bottom to the top to create a burrito. Ensure the filling is securely wrapped inside.

Prepare the Sauce

    Heat the Sauce

    In a small saucepan over medium heat, warm the red enchilada sauce until heated through, about 5 minutes.

Bake the Burritos

    Combine with Sauce

    Preheat your oven to 375°F (190°C). Pour half of the heated enchilada sauce into a baking dish. Place the assembled burritos seam-side down in the dish and pour the remaining sauce over the top.

    Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the burritos are heated through and the sauce is bubbly.
