    Make the Dough

    On a clean surface, mound the flour and create a well in the center. Add the eggs, olive oil, and salt into the well. Using a fork, beat the eggs gently while gradually incorporating the flour from the edges of the well until combined.

    Knead the Dough

    Once the dough starts to come together, use your hands to knead it for about 8-10 minutes until smooth and elastic. If the dough is too sticky, sprinkle a little more flour as needed.

    Rest the Dough

    Wrap the kneaded dough in plastic wrap and let it rest for at least 30 minutes at room temperature. This allows the gluten to relax, making it easier to roll out.

    Roll Out the Dough

    After resting, divide the dough into quarters. Flatten one piece slightly, then roll it out using a pasta machine or a rolling pin until it reaches your desired thickness.

    Cut the Pasta

    Cut the rolled dough into your desired shape (fettuccine, tagliatelle, lasagna sheets, etc.) using a knife or pasta cutter. Dust with flour to prevent sticking.

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the pasta and cook for 2-4 minutes until al dente. Fresh pasta cooks much quicker than dried pasta.
