Method

Preparation

  1. 1

    Wash the Vegetables

Thoroughly wash the fresh spinach, cucumber, tomato, and red onion under cold running water. Pat dry with a clean kitchen towel or paper towels.

  2. 2

    Slice the Apple

Core and slice the apple into thin wedges. Leave the skin on for added texture and nutrients.

  3. 3

    Dice the Cucumber

Cut the cucumber in half lengthwise, then slice into thin half-moon shapes.

  4. 4

    Chop the Tomato

Remove the stem from the tomato and chop it into bite-sized pieces.

  5. 5

    Slice the Red Onion

Peel the red onion and slice it thinly. You can soak the slices in cold water for a few minutes to reduce the sharpness if desired.

  6. 6

    Prepare the Olives

If using whole olives, pit them and slice them into rings. If they are pre-sliced, simply measure out the quantity needed.

  7. 7

    Toast the Walnuts

Preheat a skillet over medium heat. Add the walnuts and toast for about 5 minutes, stirring occasionally, until they are fragrant and slightly golden.

Assembly

  1. 8

    Combine the Salad

In a large salad bowl, combine the washed spinach, sliced apple, diced cucumber, chopped tomato, sliced red onion, and sliced olives.

  2. 9

    Add Toppings

Sprinkle the toasted walnuts and crumbled blue cheese over the salad mixture.

  3. 10

    Toss the Salad

Gently toss all the ingredients together until well combined. Be careful not to crush the blue cheese.

  4. 11

    Serve

Divide the salad into serving bowls or plates. Optionally, drizzle with your favorite vinaigrette or olive oil before serving.
