Preparing the Potatoes

    Cut the Potatoes

    Wash the Russet potatoes thoroughly and peel them if desired. Cut each potato into thin strips (about 1/4 inch thick) to make the fries.

    Soak the Potatoes

    Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry using paper towels. Removing moisture is key for crispy fries.

Frying the Potatoes

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer for accuracy.

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 4-5 minutes or until golden brown and crispy.

    Drain and Season

    Once cooked, remove the fries from the oil using a slotted spoon and place them on paper towels to drain excess oil. While hot, sprinkle with salt and black pepper to taste.

Preparing the Toppings

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet, drain on paper towels, and chop into small pieces.

    Melt the Cheese

    In the same skillet, or in a microwave, melt the cheddar cheese until gooey. If using a microwave, heat in 30-second intervals, stirring in between.

Assembling the Fries

    Place the crispy fries on a serving platter. Drizzle the melted cheddar cheese over the fries, followed by the chopped bacon.

    If desired, sprinkle chopped chives over the top for added flavor and presentation.
