Season the Chicken
Rub the mixture all over the chicken thighs, ensuring they are well coated.

Bake the Chicken
Place the chicken thighs in a baking dish and roast in the preheated oven for 35-40 minutes or until the internal temperature reaches 75°C (165°F).
Side Dish: Roasted Vegetables

Prepare the Vegetables
Peel and chop the carrots into bite-sized pieces. Cut the red bell pepper into strips and prepare the broccoli florets.

Roast the Vegetables
Spread the vegetables in a single layer on a baking sheet and roast in the oven for about 25 minutes, until tender and slightly caramelized.
Dessert: Sticky Toffee Pudding

Prepare the Dates
Place the chopped dates in a bowl and pour the boiling water over them. Let them soak for about 15 minutes.

Make the Batter
In a separate bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

Combine Ingredients
Fold in the self-raising flour and the soaked date mixture (with any remaining water) until just combined.

Pour the batter into a greased baking dish and bake in the oven at 180°C (350°F) for 30-35 minutes or until a toothpick inserted into the center comes out clean.
