Method

Eggs

  1. 1

    Prepare the Eggs

In a small bowl, crack the 2 eggs and season with salt and black pepper. Whisk lightly to combine.

  2. 2

    Cook the Eggs

In a non-stick skillet, heat 1 tablespoon of butter or oil over medium heat. Pour in the eggs and cook until the edges are set, about 2-3 minutes. For sunny-side-up, cook without flipping until the whites are set. For scrambled, gently stir until fully cooked, about 3-4 minutes.

Homefries

  1. 3

    Prepare the Potatoes

Wash and peel the potatoes. Cut them into small cubes (about 1/2 inch). Place them in a pot of boiling water and cook for 5-7 minutes until just tender. Drain and set aside.

  2. 4

    Cook the Vegetables

In the same skillet used for the eggs, add 2 tablespoons of olive oil over medium heat. Add the diced onion and bell pepper, and sauté for 3-4 minutes until they start to soften.

  3. 5

    Combine and Fry

Add the pre-cooked potatoes to the skillet with the onions and bell peppers. Sprinkle with paprika, salt, and black pepper. Cook for an additional 8-10 minutes, stirring occasionally, until the potatoes are golden and crispy.

Toast

  1. 6

    Toast the Bread

While the homefries are cooking, toast the two slices of bread to your desired level of crispness using a toaster or in a skillet.

  2. 7

    Butter the Toast

Spread 1 tablespoon of butter or margarine on the hot toast before serving.
