Method
Crust Preparation
- 1
Prepare the Crust
In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
- 2
Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Make sure it is even and compact.
- 3
Pre-bake the Crust
Preheat your oven to 350°F (175°C). Bake the crust for about 10 minutes until set. Remove from oven and let cool while preparing the filling.
Cheesecake Filling Preparation
- 4
Mix the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar, and mix until well combined.
- 5
Add Remaining Ingredients
Add sour cream, vanilla extract, and eggs one at a time, mixing on low speed until just combined after each addition. Do not overmix.
- 6
Pour into Crust
Pour the cheesecake filling into the cooled crust, spreading it evenly with a spatula.
- 7
Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- 8
Chill the Cheesecake
Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, until completely chilled and set.
Strawberry Topping Preparation
- 9
Prepare the Strawberries
In a medium bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries evenly.
- 10
Let the Topping Sit
Allow the mixture to sit for about 15-30 minutes until the strawberries release their juices and form a syrup.
- 11
Top the Cheesecake
Before serving, spoon the strawberry topping over the chilled cheesecake, spreading it evenly.
