Main Ingredients

Method

Preparation

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Vegetables

While the spaghetti cooks, chop the garlic, tomatoes, and mushrooms. Slice the black olives and set them aside.

Cooking

  1. 3

    Sauté the Garlic

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

  2. 4

    Add the Vegetables

Add the chopped tomatoes, mushrooms, and black olives to the skillet. Stir well and cook for about 5 minutes until the vegetables start to soften.

  3. 5

    Pour in the Wine

Add the white wine to the skillet and bring to a simmer. Cook for an additional 5 minutes, allowing the alcohol to cook off and the sauce to reduce slightly.

  4. 6

    Combine with Spaghetti

Add the cooked spaghetti to the skillet and toss to combine, ensuring the pasta is well coated in the sauce. Season with salt and black pepper to taste.

  5. 7

    Add Feta and Basil

Remove the skillet from heat and fold in the crumbled feta cheese and fresh basil. Mix gently to combine.
