Shrimp Preparation

    Season the Shrimp

    In a bowl, season the peeled and deveined shrimp with salt and black pepper. Set aside.

    Prepare Breading Stations

    In one bowl, combine all-purpose flour and cornstarch. In another bowl, add the beaten egg.

    Bread the Shrimp

    Dredge each shrimp in the flour mixture, dip into the beaten egg, and then coat again in the flour mixture. Set aside on a plate.

Frying the Shrimp

    Heat Oil

    In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Carefully add the breaded shrimp to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Chipotle Sauce Preparation

    Make the Sauce

    In a bowl, whisk together mayonnaise, minced chipotle peppers, lime juice, honey, garlic powder, and paprika until smooth and well combined.

Slaw Preparation

    Mix the Slaw

    In a large bowl, combine shredded cabbage, shredded carrots, sliced red onion, and chopped cilantro.

    Dress the Slaw

    In a separate small bowl, whisk together lime juice, olive oil, salt, and black pepper. Pour the dressing over the slaw and toss to combine.

Assembly

    On a serving plate, layer the slaw and top with the crispy fried shrimp. Drizzle the chipotle sauce over the shrimp and serve immediately.
