Prepare the Vegetables
Wash and chop the zucchini, bell pepper, and carrot into bite-sized pieces.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped zucchini, bell pepper, and carrot.

Season the Vegetables
Sprinkle in the garlic powder, salt, and black pepper. Stir well to coat the vegetables evenly.

Cook the Vegetables
Sauté the vegetables for about 5-7 minutes, or until they are tender but still crisp.

Transfer the vegetable medley to a serving dish and keep warm.

Rinse the Quinoa
Rinse the quinoa under cold water in a fine mesh strainer to remove any bitterness.

Cook the Quinoa
In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over high heat.

Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is fluffy and water is absorbed.

Remove from heat and let it sit covered for 5 minutes. Then fluff with a fork and stir in the fresh parsley, lemon juice, and salt.
