Cook the Penne
In a large pot of boiling salted water, add the penne pasta and cook according to package instructions until al dente, usually about 10-12 minutes. Drain and set aside.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

Stir in diced tomatoes and fresh spinach. Cook for an additional 2-3 minutes until the spinach wilts.
Combine and Serve

Add the Sauce
Pour in the white wine and allow it to simmer for about 3-4 minutes, reducing slightly.

Add the cooked penne pasta to the skillet and toss to coat it in the sauce and vegetables.

Season with black pepper and stir in grated Parmesan cheese until well combined.

Serve hot, garnished with extra Parmesan cheese if desired.
