Prepare the Protein
If using beef brisket, slow-cook or braise it until tender, then shred it. If using grilled chicken, grill the chicken breast until fully cooked, then shred or chop into bite-sized pieces.

Chop the Vegetables
Dice the tomatoes and finely chop the scallions. If using fresh jalapenos, slice them thinly or leave them whole for more heat.

Prepare the Cheese
Grate the cheese if not pre-shredded. This helps it melt evenly over the nachos.
Assembly

Layer the Nachos
On a large oven-safe platter or baking sheet, spread a layer of tortilla chips evenly across the surface.

Add Toppings
Sprinkle half of the shredded cheese over the chips, followed by the prepared protein (beef brisket or grilled chicken), jalapenos, diced tomatoes, and scallions. Top with the remaining cheese.

Melt the Cheese
Place the assembled nachos in a preheated oven at 180°C (350°F) for about 10 minutes or until the cheese is fully melted and bubbly.
Serving

Add the Finishing Touches
Once out of the oven, drizzle the nachos with salsa, guacamole, and sour cream. Serve immediately while warm.

Optionally, garnish with extra chopped scallions or cilantro for added flavor.
