Prepare the Onion Rings

Slice the Onions
Peel the onions and cut them into 1/4 inch thick slices. Separate the slices into rings and set aside.

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Mix well. Gradually add the cold sparkling water while whisking until a smooth batter forms.
Fry the Onion Rings

Heat the Oil
In a deep frying pan or a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Onion Rings
Dip each onion ring into the batter, allowing any excess to drip off before carefully placing it into the hot oil.

Drain and Cool
Remove the fried onion rings from the oil and place them on a plate lined with paper towels to drain excess oil. Allow to cool slightly before serving.

In a small bowl, mix the ketchup, mayonnaise, hot sauce, garlic powder, and sour cream together until well combined. Adjust ingredients to taste.
