Wash and cut the zucchini into thick slices. Remove the seeds from the bell peppers and cut them into strips. Peel and slice the red onion into wedges. Clean the mushrooms with a damp cloth and leave them whole or cut them in half if large.

In a mixing bowl, combine the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and black pepper. Whisk together until well combined.

Marinate the Vegetables

Add the prepared vegetables to the marinade and toss until they are evenly coated. Let them marinate for at least 15 minutes, or up to 1 hour for more flavor.
