Preparing the Calamari

Clean the Calamari
Rinse the fresh calamari under cold water. Remove the head, tentacles, and innards. Cut the body into rings about 1/2 inch thick.

Prepare the Coating
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.
Frying the Calamari

Heat the Oil
In a deep skillet or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Dredge the calamari rings in the flour mixture, ensuring they are well coated. Shake off any excess flour.

Fry the Calamari
Carefully add the coated calamari to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Making the Tomato Sauce

Cook the Sauce
In a small saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the canned crushed tomatoes, oregano, salt, black pepper, and sugar. Stir well and let it simmer for about 10 minutes.

Serve the fried calamari hot, accompanied by the tomato sauce for dipping and lemon wedges on the side.
