Fish Preparation

    Prepare the Batter

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold water while whisking until the batter is smooth and thick.

    Fry the Cod

    Heat the vegetable oil in a deep skillet over medium-high heat. Once hot, dip each cod fillet into the batter, allowing excess to drip off, then carefully place it into the hot oil. Fry in batches for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

    Make the Slaw

    In a large bowl, combine the shredded cabbage, grated carrot, chopped cilantro, lime juice, salt, and black pepper. Toss well to mix and set aside to let the flavors meld for about 10 minutes.

Chipotle Sauce Preparation

    In a small bowl, mix together the mayonnaise, chipotle peppers, lime juice, garlic powder, and salt until smooth. Adjust seasoning to taste and set aside.

Assemble Tacos

    Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side. To assemble, place a few pieces of fried cod on each tortilla, top with slaw, and drizzle with chipotle sauce. Serve immediately.
