Prepare Filet Mignon

    Season the Steak

    Rub the filet mignon pieces with olive oil, salt, and black pepper on both sides.

    Grill the Steak

    Preheat a grill or grill pan over medium-high heat. Cook the filet mignon for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest.

Poach the Eggs

    Boil Water

    Fill a pot with water and bring it to a gentle simmer. Add white vinegar to the water.

    Crack each egg into a small bowl. Gently slide the eggs into the simmering water. Poach for about 3-4 minutes or until the whites are set but the yolks are still runny. Remove with a slotted spoon and let drain on a paper towel.

Make Hollandaise Sauce

    In a saucepan, melt the unsalted butter over low heat until fully melted, then set aside.

Assembly

    Split the English muffins in half and toast them until golden brown.
