Add Wine and Broth
Pour in the dry white wine and scrape the bottom of the pot to deglaze it. Let it simmer for 5 minutes until the wine reduces slightly. Then, add the beef broth, thyme, bay leaves, salt, and pepper.

Simmer the Soup
Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes to allow the flavors to meld. Remove the bay leaves before serving.

Bake the Croutons
Spread the croutons on a baking sheet and bake for about 10-15 minutes, or until they are golden brown and crispy. Set aside.

Add Croutons
Place the baked herb croutons on top of the cheese in each bowl.

Broil the Soup
Place the bowls under a broiler for about 2-3 minutes, or until the cheese is melted and bubbly. Keep an eye on them to prevent burning.
